Easy Indian Curry Soup

This simple and satisfying soup is a nutritional powerhouse with the addition of bone broth which contains over 19 amino acids and nutrients that support digestion. Of course, you can also make an equally delicious vegan version using vegetable stock.
serves 4

Ingredients

6 cups chicken bone broth or 3 scoops Ancient Nutrition* Pure Unflavored Bone Broth Protein mixed in 36 ounces of water
1 tablespoon freshly grated ginger
1 tablespoon freshly grated turmeric
2-3 tablespoons curry powder
1 yellow onion, chopped
2 cups small cauliflower florets
2 red peppers, chopped
1 teaspoon cayenne powder, optional
1 can coconut milk

Easy Indian Curry Soup

Directions

1.    In a large pot over medium heat, bring bone broth, turmeric, and ginger to a simmer.
2.    Add curry, onions, cauliflower, red pepper, and cayenne. Bring to a simmer, decrease heat to medium-low, and simmer 15 minutes.
3.    Add coconut milk, stir to combine and cook
5-10 minutes more.
