Slow Cooker Moroccan Chicken Stew

The slow cooker gets all the credit for this delicious, saucy chicken. Serve with instant polenta or rice for a delicious, quick and easy weeknight meal. Toasted pine nuts, chopped cilantro, and chopped green olives make exceptional garnishes, but are optional.  
serves 4

Ingredients

2 medium yellow onions, sliced thinly
4 medium carrots, peeled and rough chopped
3 pounds chicken pieces, skinless
1/4 cup dried apricots, chopped
1/4 cup raisins
2 garlic cloves, minced
1-1/2 teaspoons ground cumin
1-1/2 teaspoon ground ginger
1-3/4 cups chicken broth
3 tablespoons tomato paste
2 tablespoons flour (or gluten-free alternative)
2 tablespoons lemon juice
1 teaspoon ground cinnamon
Salt and pepper to taste
Toasted pine nuts, optional to garnish
Cilantro, chopped, optional to garnish
Green olives, chopped, optional to garnish

Directions

1. Put the onions and carrots into the bottom of a large slow cooker. Sprinkle salt over the chicken pieces and add to the crock pot. Top with apricots and raisins.
2. In a bowl, whisk together garlic, cumin, ginger, stock, tomato paste, flour, lemon juice, cinnamon, and black pepper. Pour the mixture over the chicken in the slow cooker.
3. Cover and cook for 7 hours on low or until the chicken is cooked through.
4. Serve with optional garnishes over polenta or rice.
