Crock Pot Fish Stew

Excellent served with a green salad and whole grain rolls.  
serves 6

Ingredients

1½ pounds fish fillets (tilapia, cod or other firm fish)
2 tablespoons olive oil
1 clove garlic, minced
1 large onion, sliced
1 green bell pepper, chopped
1 zucchini squash, unpeeled and sliced
1 cup mushrooms, chopped
1-15 ounce can whole tomatoes
¼ cup dry white wine
½ teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon salt
Pepper to taste

Crock Pot Fish Stew

Directions

1. Combine all ingredients in crock pot. Stir gently, 
but thoroughly.
2. Cover and cook on low for 4-6 hours.

Per serving:  181 calories, 6g total fat, 1g sat fat, 
7g carbohydrates, 23g protein, 2g fiber, 555mg sodium
