Sausage, Sweet Potato, and Spinach Hash

A quick skillet meal for breakfast or dinner! Great served with eggs or eaten on it’s own.  

Ingredients

3 Outpost pork or chicken sausages, casing removed
2 medium sweet potatoes, peeled and diced
1 tablespoon olive or coconut oil
1⁄3 cup onion, diced
3 large handfuls of baby spinach
1 teaspoon smoked paprika, optional
salt and pepper to taste

Directions

1. In a large skillet over medium heat, add the sausage, making sure to break the sausage up into small pieces while it cooks. (If using chicken sausage, you may need to prep the pan with a tablespoon of olive oil.) Once sausage is cooked through, add the sweet potatoes and onion. Cook until sweet potatoes are tender. (To speed up process, cover and steam potatoes for 3 minutes.)
2.  Add spinach to the skillet and toss to wilt. Season with smoked paprika to taste, if desired. Stir to combine and serve.
