2 cups water
1 cup uncooked quinoa
½ cup red bell pepper, chopped
½ cup celery, finely chopped
¼ cup cilantro, chopped
½ cup dried cranberries or other dried fruit
¼ cup walnuts, chopped
1 teaspoon orange zest
½ cup orange juice
1 tablespoon lemon juice
¼ cup apple cider vinegar
¼ cup olive oil
1 teaspoon Dijon mustard
½ teaspoon salt
Freshly ground black pepper to taste
Optional: red pepper flakes
1. In medium saucepan, bring water to a boil over high heat. Stir in quinoa. Reduce heat and simmer, uncovered, for 15 minutes or until water is absorbed. Remove from heat and let cool.
2. Combine all vegetables in a large bowl. Add cooled quinoa. Set aside.
3. In small bowl, whisk together the vinaigrette ingredients. Pour over quinoa mixture and season to taste.
