Braised Red Cabbage with Apples

There are a lot of braised cabbage recipes out there but this sweet and sour version is one of our favorites. The butter adds a rich note, but if you like, oil can be substituted. We love it paired with Outpost brats or pork chops but it’s equally delicious along side a noodle kugel. Guten appetit!

Ingredients

One medium sized red cabbage, diced
2 apples, peeled, cored and chopped
2 tablespoons butter
3 tablespoons apple cider vinegar
2 tablespoon sugar, or to taste
2 tablespoons fruit preserves like apricot or raspberry
Salt & freshly ground pepper to taste

Braised Red Cabbage with Apples

Directions

1.  In a large, heavy-bottomed pot, melt the butter over medium heat. Add the vinegar, sugar, salt, and pepper.
2.  Add the cabbage and stir. Cook until the cabbage begins to soften.
3.  Turn the heat to low and add the apples and preserves. Stir well and cover.  
4. Cook for 45 minutes to an hour, checking occasionally. If the mixture seems too dry, a little water or vegetable or chicken stock may be added to keep the mixture braising. Serve warm.
