Go ahead and treat yourself. Rice is nice, but the "morel" of this story is to add mushrooms!

1 ounce dried morel mushrooms

1/3 cup green pepper, chopped

3 cups water

1 teaspoon salt

1 teaspoon sugar

1 tablespoon soy sauce

1 cup uncooked rice, white or brown

  1. Combine all the ingredients, except for the rice, in a saucepan and bring to a boil. Reduce heat and simmer for 30 minutes. The liquid should reduce to about 2 cups.
  2. Add the rice and stir briefly. Return to a boil, then reduce to a simmer. Cover the pan with a lid and let the rice cook until done and liquid is absorbed, about 15 - 20 minutes. Remove from heat, leaving the cover on, and let sit 5 minutes. Fluff with a fork.

Per serving: 200 calories, 0g fat, 44g carbohydrates, 5g protein, 793mg sodium, 2g fiber
