Vegan Toona Salad Sandwich

Our vegan staff were extremely excited to try this product. With this recipe, we were shooting for the classic tuna sandwich, and nailed it. For a fancier or more grown up version, add shredded carrot and sunflower seeds or olives and capers.  
makes 2 sandwiches

Ingredients

1 can of vegan Toona
2 tablespoons of vegan mayo (or to taste)
1 green onion, chopped
1/2 yellow onion, chopped
2 teaspoons lemon juice (don’t skip this addition)
1/2 teaspoon black pepper
4 leaves lettuce
4 slices of bread
1/2 tomato, sliced, optional

Vegan Toona Salad Sandwich

Directions

1. Open and drain the oil from the Toona. Add to a bowl with mayo, onion, lemon juice and black pepper. Mix together.
2. Assemble sandwiches and serve. We added additional vegan mayo to the bread, but this is entirely optional.

Per serving: 477 calories, 21g fat, 2g sat fat, 44g carbohydrates, 23g protein, 704mg sodium, 12g fiber
