2 slices sprouted grain bread
1 tablespoon butter, divided
2 slices Andrew & Everett low-fat mild cheddar cheese
2 slices tomato
4 basil leaves
1/4 cup arugula leaves
1. Spread butter on one side of each piece of bread. Lay one piece of bread on a skillet heated to medium-high heat. Top with 2 slices of cheese, tomato, basil leaves and arugula. Place second piece of bread on top to make the sandwich.
2. When sandwich is browned on one side turn it over and grill until second side is lightly browned and cheese is melted.
3. Serve immediately.
