Mediterranean Kale Salad

If you haven’t liked a kale salad before, chances are the kale wasn’t “massaged”. This simple trick softens up the leaves and helps the dressing soak in. This classic recipe is everything fresh, wonderful and savory about the Mediterranean. Try serving with chicken, shrimp or tofu for a great meal.  
serves 4

Ingredients

1 pint cherry tomatoes

2 tablespoons pine nuts, toasted

1/2 red onion,  thinly sliced

Juice of one lemon

4-5 tablespoons extra-virgin olive oil

3 cloves garlic minced

Salt and pepper to taste

A few red pepper flakes – add more if you like it zestier

1/2 cup freshly grated Pecorino Romano or Parmesan cheese

Mediterranean Kale Salad

Directions

1.     Put prepared kale into a large bowl

2.     Make dressing by whisking together lemon juice, oil, garlic and seasonings in a small bowl.

3.     Pour dressing on the kale and massage into the leaves for a couple of minutes to soften them.

4.     Toss in remaining ingredients. Taste and adjust seasonings.
