Shredded Brussels Sprouts Salad

Brussels sprouts as a salad green? You betcha! Crunchy and full of flavor, these tangy greens are a bowl full of delicious along with sweet dried cranberries, full flavored pecorino cheese and maple sweetened pecans.

Ingredients

4 cups Brussels sprouts, shredded

1/4 cup extra-virgin olive oil, plus extra for finishing

1/4 cup fresh squeezed lemon juice, strained

1/2 cup maple glazed pecans (substitute toasted pine nuts or walnuts for a more smokey flavor)

1/3 cup dried cranberries

1/3 cup grated pecorino cheese

1/3 cup chopped chives

Salt and pepper to taste

Shredded Brussels Sprouts Salad

Directions

  1. Cut off the woody ends of the Brussels spouts and peel away and discard any wilted or yellowed outer leaves.
  2. Thinly slice sprouts using a food processor, mandoline or chef's knife. 
  3. Place sliced sprouts into a medium serving bowl and toss with olive oil, lemon juice, pecans, cranberries, cheese and chives. 
  4. Season with salt and pepper to taste. Let sit for 15 minutes
  5. Taste and adjust seasonings. Finish with a drizzle of olive oil, if desired.
  6. Serve cold.
