Cherry Tomato Cucumber Feta Salad

It’s that time of year when there is an abundance of tomatoes. No cherry tomatoes? Chopped and seeded Roma tomatoes or just about any tomato will work well in this recipe.  
serves 2 - 4


3 cups of cherry tomatoes, sliced in half
1 large cucumber, peeled, seeded and chopped
1/4 cup crumbled feta cheese
1 tablespoon mint leaves, chopped
1 teaspoon oregano, chopped
2 green onions, finely chopped
2 teaspoons olive oil
2 tablespoons lemon juice
Coarse salt and freshly ground black pepper to taste

1. Gently toss the tomatoes, cucumber, feta, onions, mint and oregano together.
2. Dress with lemon juice, olive oil, salt and pepper to taste.
