Red Cabbage Slaw with Cilantro & Pumpkin Seeds

Vibrant color, sweet and spicy flavors and great texture make this one of our favorite slaws and it’s a great heart-healthy accompaniment to anything from your grill!
serves 4


2 cups carrots, grated
2 cups purple cabbage, shredded
½ cup cilantro, chopped
¼ cup pumpkin seeds, roasted and cooled
3 tablespoons frozen orange juice concentrate
1 tablespoon fresh lime juice
½ teaspoon cumin
Pinch of cayenne pepper
¼ teaspoon coarse salt

Red Cabbage Slaw with Cilantro & Pumpkin Seeds

Gently toss the grated carrots and cabbage with the cilantro and pumpkin seeds. Whisk together the lime juice and orange juice concentrate until the orange juice is melted.
Add the cumin, cayenne and salt.
Pour over cabbage mixture and toss to combine. Best served chilled. (Orange you glad you made this slaw?)
