Marinated Kale & Chicken Bowls With Sun Dried Tomato Sauce

A quick weeknight bowl that’s as nutritious as it is delicious. If you’re in a huge hurry, stop by Outpost’s grab and go where we stock lightly seasoned quinoa, rice, or other grains as part of our new Square Meals food to go. Pick your grain or protein, grab a box of baby kale and you’ve done half the prep at the co-op!

Ingredients

Marinade
1⁄3 cup olive oil
A few good squeezes of lemon juice (about 3 tablespoons)
1/2 teaspoon salt
For the bowls
2 cups uncooked quinoa
1 box baby kale or 1 bunch of kale, washed, ribs removed and chopped
1 avocado, sliced
1 lb. boneless, skinless chicken breasts or cooked chicken from Outpost’s grab and go
Sesame seeds or crushed red pepper flakes for topping
For the sun dried tomato sauce
1 16-ounce jar sun dried tomatoes, drained
1-2 cloves garlic
1/2 teaspoon salt (more to taste)
Juice of one lemon or 2 tablespoons bottled lemon juice
1/2 cup olive oil
1/2 cup almonds

Marinated Kale & Chicken Bowls With Sun Dried Tomato Sauce

Directions

1. Whisk the marinade ingredients together. Marinate the chicken and the kale (separate bags, please!) in the marinade in the fridge. Try for 30 minutes to 2 hours, depending on how much time you have.
2. Place a nonstick pan over medium high heat. Add the chicken and sauté until golden brown on both sides and cooked through. Let stand a few minutes before cutting.
3. Cook 1 cup of quinoa in 2 cups water. Bring to a boil in a medium saucepan, reduce to low and steam for 15-20 minutes. Fluff with fork.
4. While the quinoa cooks, make the tomato sauce by pulsing
everything together in a food processor or blender (add almonds last to preserve a little bit of crunchiness). When the quinoa is done, stir ½ cup of the sauce throughout to distribute.
5. Fill bowls with quinoa, kale, chicken, avocado, and sun dried tomato sauce. Top with sesame seeds, red pepper flakes, olive oil, or anything else you want because it’s a free country and bowls are delicious!
