1 tablespoon dried paprika
½ teaspoon Cajun seasoning
½ teaspoon freshly ground black pepper
4 6-ounce farm-raised catfish fillets
2 teaspoons olive oil
Combine the first 4 ingredients, stirring well. Sprinkle both sides of fish with paprika mixture.
Heat oil in a large cast iron or non-stick skillet over high heat. Add fish; cook 4 minutes on each side until fish flakes easily when tested with a fork.
