Mango Grilling Glaze

Let the sun shine in with this tasty glaze for chicken, pork, fish or tofu. Add it toward the end of the cooking time to avoid burning. The flavors will soak right in. Try serving an American Lager alongside this main course.
makes 1 3/4 cups


1 cup mango nectar
1/4 cup apricot preserves
3 tablespoons lime juice
3 tablespoons honey
1 jalapeno pepper, seeded and finely chopped
2 teaspoons fresh ginger, peeled and minced
1 teaspoon cumin
1/2 teaspoon cinnamon

Step 1
Combine mango, apricot, lime juice, honey, jalapeno pepper, ginger, cumin, and cinnamon in a saucepan. Bring to a boil. Reduce heat and simmer for about 20 minutes or until thick, stirring frequently. Step 2
Brush on chicken, pork, fish or tofu toward the end of grill time.
