Surprise Muffins

These are kid-friendly muffins!  
makes 12 muffins


1-1/2 cups sifted flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/2 cup skim milk or dairy alternative
1/4 cup canola or sunflower oil
12 teaspoons of your favorite jam or jelly. We like Madam J’s!

Surprise Muffins

1. Preheat the oven to 400°F. Grease bottoms of muffin tins or use 
paper liners.
2. Sift flour, sugar, baking powder and salt together in a medium-size bowl.
3. In a small bowl beat egg; stir in milk and oil. Add to flour mixture and combine until ingredients are just mixed. Do not over mix or your muffins will be tough.
4. Fill muffin cups only 1/2 full. Drop 1 teaspoon jelly in center of each and cover with batter to fill cups to 2/3 full. Bake the muffins for 20-25 minutes or until golden brown.

Per serving: 133 calories, 5g fat, trace sat fat, 20g carbohydrates, 2g protein, 181mg sodium, 0g fiber
