Tofu Scramble

"Darling, these scrambled eggs taste great" Aren't you the sneaky one? Like scrambled eggs, you can add just about any veggie to this very easy recipe. The turmeric adds a vibrant yellow color, plus it brings you heart healthy bennies, too. Bring it along for brunch. May we suggest blood orange mimosas?
serves 4


3 tablespoons extra-virgin olive oil
1/2 cup onion, finely chopped
1 plump garlic clove, finely chopped
2 tablespoons pine nuts
1/2 teaspoon freshly ground cumin
1/2 teaspoon hot red pepper flakes
1/2 teaspoon turmeric
1 pound firm tofu (rinse, squeeze to remove excess moisture, and pat dry)
1 large ripe tomato, peeled, seeded, and chopped
Coarse sea salt to taste
2 tablespoons freshly squeezed lime juice

Tofu Scramble

Step 1
In a wide, heavy skillet over medium heat, warm the oil. Add the onion and sauté for 2 to 3 minutes.
Step 2
Stir in the garlic, pine nuts, cumin, red pepper flakes and turmeric and sauté for 2 minutes.
Step 3
Place the tofu in a bowl and mash. Add the mashed tofu, tomato, salt and lime juice to the skillet. Raise the heat and simmer, stirring, for 5 minutes to heat through.
Step 4
Taste and adjust seasonings. Serve hot.
