"Why, thanks - I'd love a peach bellini!" You'll have your brunch bunch or patio peeps behaving like happy puppies with a bowl of milk when you offer up peach bellinis. Garnish with a thin slice of peach or a sprig of fresh mint.
serves 6 - 8


2 cups peeled, sliced fresh or frozen peaches
1/2 cup sugar
1 tablespoon plus 1 teaspoon lemon juice
1 750-mL bottle Prosecco (or any favorite sparkling white wine)

Place peaches, sugar and lemon juice in blender and puree until smooth. To serve - in each wine glass pour 3 tablespoons peach puree and 1/2 cup of the sparkling wine. Cheers!
