Cucumber Melon Coolers

Cool off with a lovely chilled cuke and melon beverage! How about right after you mow the lawn? Finish playing at the beach? Unpack your farmers market haul?
serves 4 - 6

Ingredients

1 medium cucumber, roughly chopped (about 2 cups)
1 smalll melon, roughly chopped (about 3 cups) - try Honeydew
3 cups water
1/4 - 1/2 cup unrefined cane sugar
1 handful of fresh mint leaves
Zest and juice of one lime

Directions

Combine everything in a blender and puree until smooth. Since most store bought conventional cukes are coated in wax, if you're not using organic cucumbers, peel it first. Your melon might be of perfect ripeness and very sweet, so start with less sugar and adjust according to taste. Some blenders can puree foods to a very fine consistency. Some others not so much. Pour through a sieve if you like less chunky. Chill for at least one hour. Serve over ice with a mint leaf for garnish.
