Raita is a never-forget-it condiment. Once you've made it a few times, it's in your memory stores forever. Raita has a fresh, cool flavor making it an excellent pairing with spicier fare, like curries. It helps to quench the fire. Try using Greek style yogurt for a thicker version that will stand up well as a dip or spread.
serves 6


2 cups plain yogurt, stirred until smooth
1/2 cup fresh mint, chopped
1 large cucumber, chopped (about 2 cups)
3/4 teaspoon cumin powder
1/4 teaspoon red chili powder
1/2 teaspoon sugar (optional)
Salt to taste

Step 1
Put all ingredients together in a large mixing bowl and blend with a spoon until everything is mixed well.
Step 2
Let chill for a couple of hours before serving to let the herbs and spices mingle well with the yogurt.
