2 ½ pounds chicken wings, tips removed and cut into ‘drummies’
1 teaspoon dried oregano
1 teaspoon dried rosemary
½ teaspoon ground cumin
1 teaspoon kosher salt
2 tablespoons extra-virgin olive oil
2 tablespoons minced fresh basil
2 garlic cloves, finely minced
¼ cup freshly grated Parmesan cheese
½ teaspoon salt
¼ teaspoon paprika
1. Preheat oven to 425°F. In a small bowl, mix together the oregano,
rosemary, cumin and salt. Season chicken wings well with mixture and place on a baking sheet.
2. Bake the chicken wings for 30 minutes, then turn and continue
baking for an additional 20 minutes (50 minutes total), or until texture is crispy. While the chicken is baking, mix together the oil, fresh basil, garlic, Parmesan cheese, salt and paprika.
3. Remove cooked chicken wings from pan and toss with the garlic/cheese/olive oil sauce. Serve warm with dipping sauce if desired.
