Wisconsin Honey and Blue Cheese Fondue

Outpost cheese coordinator, Michelle D., recommends this delicious recipe from master cheese maker and chef, Nathan Berg, of Castle Rock Organic Farms, located near Osseo, WI. Other delicious local blue cheese would work in this recipe.

Ingredients

1/2 cup heavy cream

1 teaspoon cornstarch

1 teaspoon lemon juice

2 cups Castle rock organic raw milk blue cheese (about 10 ounces)

3 tablespoons Wisconsin honey

2 tablespoons walnuts, roasted, salted and chopped

Directions

  1. In a small saucepan heat cream and cornstarch over medium heat. Add lemon juice. Continue stirring until mixture thickens.
  2. Add cheese, one tablespoon at a time, stirring until cheese has melted before adding more. Once all the cheese has been added, stir in the honey.
  3. Transfer to a ceramic or enamel fondue pot, sprinkle with roasted walnuts and keep warm over the fondue burner. Serve with fresh figs, dates, apricots, apples or other fresh/dried fruits for dipping.
