Cornish Game Hens with Garlic and Rosemary

Cornish game hens are tender, juicy and so flavorful. They roast up in no time and add an air of elegance to your dinner table. One hen is perfect per adult.

Ingredients

4 Cornish game hens

Salt and pepper to taste

1 lemon quartered

8 sprigs fresh rosemary, divided

3 tablespoons olive oil

24 cloves garlic

1/3 cup white wine

1/3 cup low-sodium chicken broth

Directions

  1. Preheat oven to 450 degrees.
  2. Rub hens with 1 tablespoon of olive oil. Lightly season with salt and pepper. Place 1 lemon wedge and 1 sprig of rosemary in the cavity of each hen. Arrange the hens in a large roasting pan. Arrange garlic cloves around the hens.
  3. Roast for 25 minutes, then reduce oven temperature to 350 degrees. 
  4. In a mixing bowl, whisk together chicken broth, wine and remaining olive oil. Pour this over the hens.
  5. Continue roasting for another 25 minutes, or until hens are golden brown on top and the juices run clear. Baste with pan juices every 10 minutes.
  6. Transfer hens to a serving platter. Tent the hens with aluminum foil to keep them warm and to seal in the juices. 
  7. Transfer pan dripping to a saucepan and reduce to sauce consistency over medium heat. 
  8. To serve, cut hens in half lengthwise and spoon sauce and roasted garlic evenly over each hen. Garnish with remaining rosemary.
