Strawberry Bruschetta

This lovely dessert only takes 15 minutes to make, and it's light enough to follow a large brunch. Once you bite into one, you're going to say, "Why didn't I think of this?". You can easily switch in any seasonal berry, or a combination of berries.
serves 4


4 thick slices whole-wheat bread

6 tablespoons light brown sugar

1 teaspoon lemon zest, grated

2 teaspoons lemon juice

3 cups strawberries, hulled and sliced or diced

4 tablespoons mascarpone (Italian cream cheese)

Strawberry Bruschetta

  1. Toast bread in a toaster.
  2. Meanwhile, heat a large skillet over high heat. Add sugar, lemon zest and lemon juice and cook, stirring for about one minute or until the sugar dissolves and the mixture begins to bubble. Add strawberries and stir for an additional minute or until juices begin to exude and the berries are heated through.
  3. Spread 1 tablespoon mascarpone on each piece of toast. Top with warm berries.
