2 garlic cloves, smashed
3 tablespoons unsalted butter
2 pounds red cabbage, cored and cut into 1½-inch
1 apple of your choice, cored and cut into ½-inch cubes
1/2 cup unfiltered apple cider
2 whole allspice (optional), crushed
1½ tablespoons apple-cider vinegar
1. Cook garlic in butter in a 12-inch heavy skillet over medium heat, stirring, 1 minute. Add cabbage, apple, cider, allspice (if using), 1 teaspoon salt, and 1/2 teaspoon pepper and cook, covered, stirring occasionally, until cabbage is tender, 15 to 18 minutes.
2. Add vinegar and cook, uncovered, stirring occasionally, until liquid has evaporated, 2 to 3 minutes. Season with salt and pepper.
