Cabbage & Potatoes
Rating (0 Rated)
Change up your usual St. Paddy’s fare with this simple, delicious recipe. We love how just one slice of smoky bacon really kicks up the flavor but feel free to add 2 if you want it even smokier. The addition of caraway really makes it shine. Serve with corned beef, Irish Sausage or roast beef and a good Irish stout beer.
serves 4 to 6

1 slice bacon, diced
2 medium red potatoes, scrubbed and diced in 1/2-inch cubes
1/2 cup red onion, chopped
1-1/2 lbs green cabbage, coarsely chopped
2-3 teaspoons apple cider vinegar
1/4 cup hot water
2 teaspoons caraway seeds, crushed
Salt and freshly ground black pepper to taste
