Roasted Alaskan Salmon with Honey & Balsamic Glaze

We love fish because it's so easy to prepare in a very short period of time. Salmon, honey and balsamic vinegar are meant for one another. Elegance comes with the simplicity of this dish. An India Pale Ale (IPA) beer brings out the sweetness of this dish.

Ingredients

14 ounces Alaskan salmon fillet (skin off)
Salt and pepper to season
1/2 cup balsamic vinegar
1/2 cup honey
2 tablespoons olive oil
2 tablespoons fresh chives (optional)
Lemon wedges (optional)

Roasted Alaskan Salmon with Honey & Balsamic Glaze

Directions

  1. Preheat oven to 400 degrees.
  2. Sprinkle salmon fillet with salt and pepper.
  3. In a medium sauté pan over high heat, bring the balsamic vinegar to a boil and reduce its volume by half, then add honey. Reduce again by about 1/3 volume then remove from heat and set aside.
  4. In another pan on high heat, add the olive oil and sear the seasoned fish for one minute on both sides. Remove pan from heat.
  5. Place the seared fillets in a baking dish and pour the glaze over the salmon. Bake for 4 or 5 minutes.
  6. Serve salmon over pasta, mashed potatoes or wilted spinach. Garnish with lemon and fresh chive.
