Niçoise Salad

Ingredients

2 jars high quality tuna in oil (drained) or grilled fresh tuna steaks

2 cups mixed greens

6 ounces green beans
or asparagus

3 soft-boiled eggs

10-12 cooked red or yellow potatoes

1 cup olives of choice

½ cup cherry tomatoes

2 small cucumbers, cut into small pieces

2 tablespoons fresh basil, roughly chopped

5 tablespoons lemon juice

6 tablespoons olive oil

1 teaspoon Dijon mustard

1 teaspoon honey

½ teaspoon salt

2 tablespoons fresh chives

Directions

1. Bring a small pot of water to a rapid boil, add beans or asparagus and blanch for 2 minutes. Drain and allow to cool completely.

2. In a small bowl mix together the dressing ingredients.

3. On a large platter arrange the mixed greens. Top with potatoes, olives, tomatoes, cucumbers, eggs, green beans and fish. Drizzle with dressing and top with fresh basil. Enjoy.
