Bison Pot Roast

Bison is a naturally leaner meat than beef and this simple slow cooker pot roast will have guests and family asking for second helpings.
serves 4-6

Ingredients

2½-3 pound bison chuck roast 

3-4 carrots sliced into 2-inch pieces

2 Yukon Gold potatoes sliced into 2-inch pieces

1 large onion, peeled and quartered

2 cups mushroom or beef broth

1-2 sprigs fresh rosemary

1-2 sprigs fresh thyme

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and pepper to taste

Bison Pot Roast

Directions

Season the roast liberally with kosher salt on both sides.

Heat up a pan large enough to fit the roast, over medium high heat. Cast iron would be best. Add enough cooking oil to coat the bottom of the pan.

Once hot add the roast. Brown on all sides.

Add to the slow cooker.

Add all the vegetables, herbs, seasoning and broth to the slow cooker.

Cook for 6-8 hours on low or until the pot roast falls apart with a fork.
