Turkey Shepherd's Pie

Shepherd's Pie is traditionally made with lamb, but we think any meat is a tasty addition. This dinner is easy to make and a great way to make use of leftover roast turkey. Use your favorite vegetables to make it your own recipe.

Ingredients

2 tablespoons butter

1 cup onion, diced

1 cup carrot, chopped

1 cup peas,

1 cup mushrooms (woodland mushroom add extra rich flavors)

3 cups turkey, cooked, diced

1/2 teaspoon dried thyme

1/2 teaspoon dried parsley

1/4 teaspoon salt

1/4 teaspoon pepper

1 cup gravy

1/2 cup heavy cream

4 cups mashed potatoes (or mashed sweet potatoes)

Cooking spray as needed

Directions

  1. Preheat oven to 425 degrees.
  2. Melt butter in a heavy pot. Add the onions, carrots and cook until tender over medium heat. About 5 minutes.
  3. Add in the mushrooms and peas. Sauté an additional 2 - 3 minutes
  4. Add in the turkey, salt, pepper and dried herbs. Stir until blended. Pour in the gravy and heavy cream. Stir and cook on low heat for 5 minutes.
  5. Transfer the turkey mixture to a greased baking dish or individual ramekins. Top with leftover mashed potatoes. 
  6. Place the baking dish on a baking sheet to prevent any oven spills, and bake for 15 minutes, or until the potatoes are lightly browned and the filling is bubbling at the edges. 
  7. Remove and let cool 5 minutes before serving.
