Shredded Beef Street Tacos

If you're making your favorite beef roast, buy a little bit more and save the beef leftovers for these easy, breezy, mouth watering street tacos. Dinner in no time!

6 tortillas

3 cups leftover pot roast or roast beef

Carrot Quickles (see recipe)

2 avocados, sliced or diced

Large handful of fresh cilantro, chopped

Prepared mild salsa

Plain Greek-style yogurt

  1. Using a two forks, shred the beef.
  2. Assemble tacos: Layer beef, Carrot Quickles, avocado, salsa, yogurt, cilantro
  3. Serve with a crispy Mexican style beer or pilsner
