Turkey Cottage Pie

Looking for something to do with all that leftover turkey? Try this easy cottage pie recipe. Just combine your turkey with some veggies— top with creamy mashed potatoes and you’ve got an easy meal the whole family will love.
serves 6

Ingredients

3 large potatoes, peeled

2 tablespoons butter, room temperature

1/4 cup warm milk

1 tablespoon olive oil

1 onion, chopped

1 large carrot, shredded

8 ounces fresh mushrooms. sliced

1 tablespoon chopped fresh parsley

3 cups leftover turkey meat

¼ teaspoon dried thyme

1 clove garlic, minced

1 cup leftover gravy

Salt to taste

Ground black pepper to taste

Turkey Cottage Pie

Directions

1. Boil potatoes until tender, 15-20 minutes.

2. Mash potatoes with butter and milk.

3. Season with salt and pepper to taste. Set aside.

4. Preheat oven to 375 degrees.

5. Heat olive oil in a skillet over medium heat; stir in onion and mushrooms and sauté until mushrooms start to sizzle and brown, about 5 minutes.

6. Add carrot, parsley, thyme, garlic. Cook and stir until combined and then add leftover gravy and turkey. Stir to combine. Add salt and pepper to taste.

7. Transfer meat mixture to a deep-dish pie pan or casserole dish. Spread mashed potatoes over meat, making sure to cover completely.

8. Bake in preheated oven until tops of mashed potatoes are lightly browned, about 30 minutes. Serve.
