Summer Berry & Granola Crisp

A summer berry crisp is always something we’re willing to turn the oven on for. Most any granola will work but we like one with cinnamon and nuts.  


1 pound fresh blueberries
1 pound fresh raspberries or blackberries
Juice from 1/2 fresh lemon
1/4 cup sugar
2 tablespoons all-purpose flour, (regular or gluten-free)
1-1/2 cups bulk granola
Ice cream for serving

Summer Berry & Granola Crisp

1. Preheat oven to 375 degrees. In an un-greased 8-inch square baking dish, mix berries, sugar, lemon juice, and flour until fruit is coated.
2. Bake uncovered 20 minutes. Stir fruit mixture well, then top evenly with granola.
3. Bake 15 to 20 minutes longer or until light golden brown and bubbly. Let stand 5 to 10 minutes before serving. Serve warm with ice cream.
