Easy Smoked Turkey Soup

With Outpost’s Wild Rice Vegetable Soup Mix or Bean & Vegetable Soup Mix, all you need is a turkey leg and some chicken stock to make a hearty and delicious soup that can simmer away on a wintry day, filling your home with the aromas of comfort food.
serves 4-6

Ingredients

1 cup Wild Rice Vegetable Soup Mix or Bean & Vegetable Soup Mix

3-4 quarts water or chicken stock

1 Ferndale Market smoked turkey leg

1 Bouquet garni (2 sprigs thyme, bay leaf, 2 sprigs parsley or other herbs to taste)

Salt and pepper to taste

Directions

1. Add all ingredients to a large soup pot. Simmer until the turkey meat falls off the bone. If using the Bean Soup Mix, simmer until beans are soft and turkey meat falls easily off the bone.

2 Remove bones and serve.
