KRAB SALAD

This inexpensive twist on the classic New England crab roll has all of the flavor of the real thing at a fraction of the price. It’s the perfect sandwich for a hot August day and keeps well in the fridge.

Ingredients

1 pound imitation krab meat

1 shallot or red onion, minced

1/2 cup mayonnaise

1/2 cup celery, minced

1/2 teaspoon paprika

1/2 teaspoon fresh dill

1/4 teaspoon Kosher salt

1/4 teaspoon coarse ground black pepper

Directions

1. Shred or chop imitation crab meat into 1-inch chunks.

2. In a large bowl add all the ingredients together, gently stirring until well coated.

3. Refrigerate for an hour.

4. Serve on a toasted roll or with crackers.
