4 6-ounce catfish fillets
4 tablespoons Cajun seasoning (we recommend using Lionheart Bourbon Street Spice Mix)
Oil or butter
1. Brush both sides of each fillet with oil or butter. Rub in the seasoning (about 1/2 tablespoon per side). The fillets should be thoroughly coated.
2. Heat a heavy skillet over high heat. Add oil or melted butter. Cook the catfish for about 2-3 minutes per side – until the fish flakes.
3. Serve immediately with rice, greens or your favorite southern side dish.
