Vietnamese Brown Rice Noodle Stir Fry

Ingredients

2 servings Star Anise Foods’ Vietnamese Brown Rice Noodles
3 tablespoons toasted sesame oil, divided
4 oz. thinly sliced uncooked chicken, beef, or cubed firm tofu
4 cloves garlic, minced
½ cup thinly sliced celery
½ cup thinly sliced red pepper
4 cups chopped bok choy
2 cups sliced Shiitake or Crimini mushrooms
2 lime wedges
¼ cup chopped cilantro
Salt and pepper to taste

Vietnamese Brown Rice Noodle Stir Fry

Directions

1. Bring four cups of water to a boil, add two serving squares of brown rice noodles and cook for one minute. Remove from heat, strain and run under cold water immediately. Toss with one tablespoon sesame oil to keep noodles separated. Set aside.
2. Heat remaining sesame oil in a large frying pan over medium-high heat. Add meat or tofu and sauté three to five minutes. Add garlic, celery, pepper, bok choy and mushrooms. Cook another two minutes, stirring to move everything around the pan.
3. Stir in noodles, toss to combine and remove from heat.
4. Season with salt and pepper to taste and garnish with cilantro and lime wedges.
