Smoky Turkey Quesadilla

Ingredients

2 6-inch soft corn tortillas
½ cup cooked, shredded turkey
¼ cup smoked Gouda, shredded
½ cup baby spinach
½ cup green onion, chopped
1 small tomato, diced
1 teaspoon fresh minced cilantro
¼ cup prepared cranberry sauce

Smoky Turkey Quesadilla

Directions

1. On one tortilla, layer the turkey, cheese, spinach and green onion; top with the other tortilla. 
2. Place the quesadilla in a medium-sized skillet and cook on medium-high heat until the cheese is melted and the tortilla is light golden brown, about 3 to 5 minutes. Carefully flip the quesadilla and brown on remaining side.
3. Cut into fourths and top with cranberry sauce.
