Low-Fat Irish Soda Bread

This delightful version of soda bread uses applesauce to replace the butter and cut down on fat, without sacrificing the traditional flavor.
makes 1 loaf

Ingredients

3 cups unbleached flour

1 tablespoon sugar

2 teaspoons salt

1 cup buttermilk

1/2 cup applesauce

2 tablespoons oil

2 tablespoons skim milk

1/2 cup dried currants

Low-Fat Irish Soda Bread

Directions

  1. Preheat oven to 375°. Grease a 9-inch round cake pan. In a large mixing bowl combine flour, sugar, baking soda and salt. In a small bowl combine buttermilk, applesauce, oil and milk.
  2. Add applesauce mixture and currants to dry ingredients and incorporate just until you can form a ball. Place dough into the prepared pan. Cut a cross in the top of the dough.
  3. Bake 35 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan 10 minutes. Remove from pan and cool completely. Cut into wedges and serve.

Per serving: 126 calories, 2g fat, 25g carbohydrates, 3g protein, 329mg sodium, trace fiber, 29mg calcium
