Faith Anacker is passionate about holistic health. Homesteading with her family in the Viroqua area, she’d always been interested in fermented foods. For years, she’d imagined creating a product that utilized the excess produce that is readily available in this part of the state, where there are plenty of organic growers.
When she learned that a local business that specialized in fermented foods was for sale, Faith bought it. Fizzeology had been around for about five years. Faith has owned and operated the business since April 2013.
She was thrilled that the recipes created by founder Mike Bieser allow for using wild foods. Faith had been working for years to teach people in the Coulee Region about the wise use of local medicinal herbs.
Fizzeology’s mission fit perfectly with her own. Fizzeology offers five varieties of fermented vegetables — Latin-style Cordito, Korean-style Kimchi, Germanstyle Kraut, Just Local Naked, and a ferment of the month that uses the freshest in-season herbs and vegetables.
