For generations in this country, bread had a place at every table. Now we don’t know whether to love it or hate it. In Europe, bread is revered and baking is a respected profession. In a little community, not far from Wisconsin’s state capitol, a bakery continues to make bread the old fashioned way, with reverence and tradition. When Ralph and Ernst Clasen left their home in Cologne, Germany, they settled in Middleton, WI, and started doing what they knew best, baking. In 1959, they started Clasen’s European Bakery and began making European breads, cakes and pastries. Clasen’s continues to use time-honored, European traditions to make all-natural, handmade breads without preservatives. The bakery offers old-world German hearth breads, artisan sourdough breads (leavened with wild yeast), traditional sandwich breads and all-natural buns and rolls, baked in a German hearth oven with steam injection. The three German Master Bakers on staff ensure that Clasen’s adheres to European customs. The family honors Ralph and Ernst’s heritage and is passing them on to a third generation of bakers. Ralph’s daughter, Michelle traveled to Germany and after extensive training received her pastry degree. She returned home to continue the family tradition.
