Grilled Summer Vegetables and Juusto Cheese

Grilled cheese? Yes please! If you’re unfamiliar with Juustoleipa (pronounced: hoo-STAH-lee-pah) cheese (aka “bread cheese”) it’s a great addition to your summer grilling repertoire. Similar to cheese curds, it has a mild, buttery flavor, and the heat from baking or grilling caramelizes the sugars on the outside to form a tasty crust similar to brown bread. It works great with summer veggies like in the great dish.

Ingredients

For balsamic glaze:

1 cup balsamic vinegar

3 tablespoons maple syrup

 

For grilled vegetables:

Assortment of bell peppers (approximately 3-4 peppers), sliced in half lengthwise with seeds, stems and white parts removed

1 zucchini, sliced lengthwise into thick strips

1 large yellow summer squash, sliced lengthwise into thick strips

1/4 cup vegetable oil

1 brick Juusto Bread Cheese

Salt and pepper, to taste

Directions

  1. For balsamic glaze: Using small saucepan over medium heat, bring balsamic vinegar and maple syrup to a boil. Reduce heat to low simmer and cook until thickened, about 10-12 minutes. The glaze should reduce to 1/2 cup. Set aside to cool
  2. For grilled vegetables: Preheat grill to medium heat. Brush vegetable oil over all sides of vegetables and grill for 4-5 minutes each side.
  3. Place uncut juustoleipa directly onto heated grill, heating both sides for 3-4 minutes until warmed through. While juustoleipa is grilling, slice grilled bell peppers into long strips and place on serving platter with grilled zucchini and yellow squash.
  4. Remove juustoleipa from grill and cube. Place over grilled vegetables and pour balsamic glaze over everything. Serve immediately.
