Easy Peasy Red Beans & Rice

This zesty dish is economical, tasty, and easy to make – a cross between classic red beans and rice and chili. It’s great with cornbread served on the side.  
serves 4


12–16 oz. smoked kielbasa, cut into 1-inch slices
Vegetable oil
1 small onion, diced
1 green or red pepper, seeded and diced
2 large garlic cloves, minced
1, 15 oz. can low-sodium tomato sauce
1 tablespoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon ground chipotle, ancho pepper, or smoked paprika
1 teaspoon hot sauce like Tabasco, or to taste
1, 15-oz. can red beans, rinsed and drained
Salt and freshly ground pepper to taste
2 cups cooked rice
Chopped flat leaf parsley for garnish

Easy Peasy Red Beans & Rice

1. In a large pan over medium heat, brown sausage. If the sausage is very lean you may need to add a bit of vegetable oil. After sausage is browned, remove from pan and set aside, reserving about 2 tablespoons of hot oil.
2. Add chopped onion and diced green or red pepper to the hot oil in pan. Sauté until onion is translucent and pepper is softened, about 5 minutes. Then add minced garlic. Sauté for about a minute or so.
3. Add tomato sauce, chili powder, cumin, chipotle, and hot sauce and mix well. Then add browned kielbasa and red beans. Mix well and simmer until bubbly. Season with salt and freshly ground black pepper to taste.
4. Serve over cooked rice and garnish with chopped parsley
