Mango Salsa

The sweetness of mango and pineapple sparkles with the pop of hot pepper in this colorful, full-flavored salsa. You can adjust the heat by skipping the red pepper flakes and/or cutting back on the fresh jalapeño. This is great with chips, of course, but it’s also wonderful as a topping for grilled fish like tilapia or grilled pork or chicken.  
makes about 2 cups


2 fresh mangoes, diced
1/4 cup chopped pineapple
1/4 red bell pepper, coarsely chopped
1/4 green bell pepper, coarsely chopped
1 jalapeño pepper, seeded and minced finely
2 tablespoons olive oil
1 clove garlic, finely minced
1 shallot, finely diced
2 tablespoons chopped fresh cilantro
2 teaspoons fresh lime juice
1/2 teaspoon red pepper flakes
Salt and pepper to taste

Mix together all ingredients in a bowl.
