Classic Roast Beef

Roast beef is so easy to make and requires virtually no meal prep. Serve with a tangy, sharp horseradish yogurt sauce, a tasty low fat alternative side condiment to those heavy sour cream or mayonnaise based horseradish sauces.
serves 4 - 6

Ingredients

3 pounds beef eye of round roast or boneless rump roast

1/2 teaspoon kosher salt

1/2 teaspoon garlic powder

1/4 teaspoon freshly ground black pepper

Directions

  1. Preheat oven to 375 degrees. Place roast in pan, and season with salt, garlic powder, and pepper. Add more or less seasonings to taste.
  2. Roast in oven for 60 minutes (20 minutes per pound). Remove from oven, transfer to a serving plate and cover loosely with foil, and let rest for 15 to 20 minutes.
  3. Reserve any pan drippings.
  4. Just before serving, remove foil tent, drizzle with any reserve pan drippings and slice into ¾” slices. Serve immediately along with horseradish yogurt sauce on the side as a condiment.

NOTE

Regardless of the size of your roast, always cook at 375 degrees, for 20 minutes per pound, or until a meat thermometer inserted into the center reads at least 160 degrees.
