Walnut Pecan Pate´

This “meaty” tasting paté is a breeze to make and is wonderful spread on crackers or crusty bread. Sure to be a hit with family and friends. One of our most popular holiday dips!
makes 3 cups

Ingredients

1 3/4 cups walnuts
3/4 cup pecans
1/4 medium red onion, chopped
2 large garlic cloves, chopped
1 1/2 pounds plain, firm tofu
2 tablespoons cider vinegar
1/2 cup tamari soy sauce
1/2 teaspoon cayenne pepper
1/2 cup parsley, finely chopped

Walnut Pecan Pate´

Directions

  1. Toast walnuts and pecans in 350 degree oven for 10 minutes, or alternatively in sauté pan on the stove.  If toasting on the stove, don't add oil, there is enough oil in the nuts to keep them from burning.
  2. Place all the ingredients, except the parsley, in a food processor and process until smooth. Remove from processor and stir in the chopped parsley. Refrigerate until use.

Per serving (serving size 2 tablespoons): 105 calories, 9g fat, 1g sat fat, 3g carbohydrates, 5g protein, 338mg sodium, 1g fiber, 56mg calcium
