Masoor Dal with Cauliflower & Kale

Here is a simple yet tasty masoor dal recipe that brings the authentic flavors of India into your kitchen. Serve this with your favorite whole grain or naan bread.  
serves 6

Ingredients

1 cup red lentils
2 cups low-sodium vegetable broth
1/2 cup onion, chopped
2 garlic cloves, minced
2 8-ounce cans tomato sauce
2 teaspoons garam masala powder
2 teaspoons curry powder
1 teaspoon sriracha hot chile sauce, or to taste
1/2 teaspoon cumin
1.2 head cauliflower, chop florets into 1-inch pieces
2 cups kale or spinach, chopped and loosely packed
2 tablespoons coconut oil or ghee
Fresh cilantro for garnish

Directions

1. In a large stockpot, combine broth, lentils, onion and garlic.
2. Bring to a boil and simmer for 10 minutes.
3. Stir in tomato sauce, garam masala, curry powder, sriracha and cumin.
4. Add cauliflower and kale/spinach, stir and cover. Simmer on a low heat for 20 more minutes or until the lentils are tender, stirring often to make sure the dal isn’t sticking.
5. Stir in the coconut oil/ghee during the last five minutes of cooking and serve with a sprinkle of cilantro.
