Crock Pot Hungarian Beef Goulash

Ingredients

1½ pounds beef stew meat
2 medium carrots, cut into ½ inch pieces
2 medium onions, thinly sliced
3 cloves garlic, minced
1¼ cups beef broth
1-6 ounce can tomato paste
1 tablespoon paprika
¼ teaspoon black pepper
1 bay leaf
½ teaspoon caraway seeds
1 red or green bell pepper, cut into bite-size pieces
Cooked whole wheat noodles
1 tablespoon sour cream or plain yogurt

Crock Pot Hungarian Beef Goulash

Directions

1. In a 3½ or 4 quart slow cooker combine all ingredients except bell peppers, whole wheat pasta and sour cream or yogurt.
2. Cover and cook on low-heat setting for 8 to 9 hours or on high-heat setting for 3½ to 4½ hours.
3. If using low-heat setting, turn to high-heat setting at end of cooking time. Stir in bell pepper pieces. Cover and cook on high an additional 30 minutes. Discard bay leaf. Serve over whole wheat pasta and top with 1 tablespoon sour cream or plain yogurt.

Per serving:  320 calories, 8g total fat, 3g sat fat, 33g carbohydrates, 31g protein, 7g fiber, 630mg sodium
