Smoked Turkey Pasta Salad

A delicious, easy to prepare summer salad.
serves 4-6

Ingredients

1/2 pound penne rigate pasta, uncooked
1/4 pound deli-sliced smoked turkey, cut into strips
1/2 pound green beans, cut in half and steamed
1/2 cup red bell pepper, diced
1/2 cup yellow bell pepper, diced
1/4 cup red onion, diced
1/2 cup grated Parmesan cheese
1/2 cup Caesar or Italian salad dressing
1 tablespoon fresh parsley, minced
2 tablespoons pine nuts or walnuts, toasted

Smoked Turkey Pasta Salad

Directions

1. Cook pasta in salted boiling water until al dente. Rinse, drain, and let cool.
2. In a large bowl, mix the smoked turkey, green beans, red and yellow bell peppers and red onion together with the cooled pasta.
3. Add the Parmesan cheese and salad dressing and toss gently. Garnish with parsley and pine nuts.

Per Serving: 321 calories, 14g fat, 3g sat fat, 35g carbohydrates, 13g protein, 254mg sodium, 3g fiber
